The Sept. 2006 issue of Black Belt magazine has an article by James LaFond on knife-knife fighting. He makes an effort to be somewhat methodical in his research, setting rules and keeping records while admitting his research limitations. The limitations of his methods are indeed significant, but I still enjoyed reading about someone's attempts to investigate the reality of knife-fighting based on actual experimentation.
The only cases of actual knife-knife fights he mentions resulted in the less-well-armed, or less motivated, person fleeing when it became clear that both parties were similarly armed.
